What an unexpected delivery!! Ken Borelli is an OG Calabrese Californian and a class act as well. Back story: a client of mine (of calabrese heritage) requested “mostaccoli” a very unique honey cookie from South Italy and sent me a recipe from Ken’s book “flavors from a calabrese kitchen - California style”. I made the cookies, loved them, and searched far and wide for this book (that was self published and out of print). So I did what any calabrese californian chef would do… I looked him up and wrote him a letter. A few short weeks later, I get a phone call from Ken, an invitation to the Italian family festa in San Jose, and a promise to ship me a book. 50/50 whole wheat battards inspired by #theperfectloaf I’m learning to decrease my white flour and increase my whole wheat for nutritional purposes. The recipes and explanation by @maurizio are second to none. Artisan whole wheat flours from @capay_mills are truly an honor to work with. These loaves include the oland wheat and maparcha poulard wheat. Both are locally grown whole grain heirloom varietals and stone ground in small batches. Important note: The sent of the dough when proofing smelled almost like croissant dough. A colleague of mine @cwiggen suggested I might be smelling the natural oils (fats) from the wheat. I think he’s right! We are so used to denatured bleached unflavorful bland flour completely processed for stability (shelf life). This capay mills flour is the opposite. Stone ground whole wheat will contain all parts of the grain, including the oils that make it go rancid. I keep mine in the freezer to slow the degradation, buy in small amounts and often, directly from the grower. A little bit of knowledge and effort pays off big time when you get to taste real bread, as it was intended to be. These, in theory, will last the year, but I tend to use them up on events and give them away as gifts. I keep trying to increase my batch sizes but it never seems to be enough. All Lacto fermented except the strawberry vinegar which has a different process. Lacto fermenting vegetables (like a ny sour or half sour pickle) brings a ton of benefits with it. The active culture created is very probiotic. The brine can be used in marinades, dressings, you name it! The products are partially digested by the bacteria, Lacto bacillus, which imparts a sour tangy flavor. Happy little cured egg yolk Remember the photo from a couple weeks back. Well this is what the finished product looks like. It’s harder and a little opaque since the moisture was pulled out from it with the salt and sugar. After I pulled it from the salt/sugar cure, I rinsed in cold water, patted dry, and set in a low temp dehydrator for about an hour. This will be treated similar to parmigiana and grated over foods like a cheese garnish. Adds richness and umami. Loaves # 50 & # 51 Wanted to do something more festive to celebrate! Bread flour 82% Whole wheat 12% Rye flour 5% H2O 76% Sea salt 1.9% Levain 20% Turmeric and cardamom TT Bulked for 6 hours with 2 stretch n folds, then lamination (with pistachio, golden flax seed and black pepper), then 3 coil folds all spaced about 30 min apart (except last coil fold was after an hour). Preshaped, shaped and then in fridge for overnight retarding. Baked in Dutch oven lid on at 500f for 10 min then dropped temp to 475 for 10 min. Lid off at 475 for another 15 min, 450f for 10 min, oven off for 10 min. Then let cool in oven with door cracked for 2 hours. My softest, almost lacy honeycomb, best loaf to date!
